A bit overwhelmed these last few weeks, not much time in the kitchen (and frustrating problems with the camera.) Anyway...
A wonderful, delicious and simple chicken dish sort of created itself today out of some ancient spices that just surfaced from where they had been lurking in the back of a cabinet, and a package of frozen (from Sam's Club) boneless skinless chicken thighs. Pics later - I want to record this before I forget. 1 pouch of chicken is ca. 1.25 lb and contains 5 thighs.
Brown the chicken slowly in a puddle of vegetable oil, turning, until it is about done through. Then add: [remember these spices are mostly old and faded] 3 Tb Cumin powder, 2 Tb ground Coriander, 1 Tb Cinnamon, 1 Tb onion powder, 1.5 Tsp Mrs. Dash, 1 Tsp. Tony Chachere's seasoning, and a can of stewed tomatoes. Simmer slowly until it is thick and fragrant and falling apart. Serve with medium grain white rice. Yum.
