Six of One, Half a Dozen of the Other

My "challenge" list of 13 ingredients includes just two meats:  beef, and chicken.  I love beef and just sort of put up with chicken.  But, limited to just the two, I am noticing that chicken is more versatile.  So which is better?*

Today I found a recipe for gluten-free fried chicken made (in part) with chick-pea flour.  I was trying to work that out 3 years ago, though the focus then was to reduce carbohydrates in the batter.  I never had a satisfactory result.  This recipe is more involved than I like, but it's a starting point.  BTW "gram flour" or besan found in the South Asia aisle is chickpea flour.  Not to be confused with graham flour, which is just whole wheat flour.

UPDATE:  New recipe from "The Minimalist" for a pizza-like snack made with  chickpea flour.  Eager to try it!
